The summer season is here and that means it’s time for some of the most exciting events in our communities! From block parties to festivals, these celebrations are a great way to get together with friends and family.

Our Colony Days event was a huge success, even with all of the delays caused by COVID in 2020. We didn’t get to see “Tent City,” but I believe everyone was simply glad to be out for this year’s Colony Days theme, “Celebrate Community.”
Carol Porter and I announced the procession in front of the Kochi Restaurant, and we had a safe ladder to climb up on the back of the truck (our announcing platform) courtesy to Jerry Tanimoto and Smart and Final in Atascadero, which was given to us by El Camino Building Supply. Thank you for your help.
Thank you to everyone who took part in the parade this year. It was wonderful to see so many different types of students, from dancing schools to the Bengals of San Benito Elementary School and the excellent marching bands of Atascadero and Paso Robles High Schools. There were many lovely vintage vehicle entries, which contributed to everyone’s pleasure. Of course, Kent Kenney drove our “Royalty,” Queen Charlotte and King Mike Byrne, as well as Grand Marshal of the Parade, Joan Rexroth, in his 1985 Cadillac Eldorado Biarritz convertible.

We’re going to get through this together, Atascadero
This week’s dish will come in handy during the holidays. The puffs may be frozen and served with a hot cup of tomato/basil soup during your own “wine tasting.”
Herb Puffs from Gruyére
14 cup unsalted butter (optional) 2/3 cup all-purpose flour 12 cup water a quarter teaspoon of salt 3 room-temperature eggs 1 cup Gruyére cheese, shredded 1 tablespoon thyme leaves, fresh 1 teaspoon fresh rosemary leaves, minced 1 teaspoon Tabasco or other hot-pepper sauce
Preheat the oven to 400 degrees Fahrenheit. Using butter, grease a large baking sheet. Combine butter and water in a saucepan over medium heat. Heat for 3 minutes, or until butter melts and water boils. Stir in the flour and salt with a wooden spoon until the mixture leaves the edges of the pan and forms a ball. Remove from the heat and set aside for 3 minutes to cool. Beat in the eggs one at a time with a wooden spoon or a handheld electric mixer on medium speed, beating thoroughly after each addition. The shine of the batter should be muted. In a large mixing bowl, combine the cheese, thyme, rosemary, and hot-pepper sauce until thoroughly combined. Bake for 15 minutes, dropping batter by rounded tablespoonfuls onto prepared baking sheet, leaving approximately 2 inches between mounds. Reduce the oven temperature to 350 degrees and bake for another 15 minutes, or until puffed and golden. Remove from oven and cool on a rack on a baking sheet. Puffs should be placed in a basket or on a tray. Warm or at room temperature is OK.
Note: Freeze puffs in a single layer once they have fully cooled. Freeze for up to 4 weeks in an airtight container. Thaw for 1 hour at room temperature before crisping for 10 minutes on a baking sheet at 350 degrees.
